Ingredients

CHICKEN MARINATE:

Chicken thigh                    1 kg (2.2 lbs)

Black pepper                     1 tsp

Sugar                                 1 tbsp

Chicken bouillon               1 tbsp

Fish sauce                         1 tbsp

Curry powder                     1/2 tbsp

Turmeric powder               1/2 tbsp

Lemongrass (minced)       2 tbsp

Shallot (minced)                1 tbsp

Garlic (minced)                  1 tbsp

Annatto oil                          1/2 tbsp

(Substitute: paprika or chili powder)

VEGETABLES:

Onion     1 Medium size(~200g)

Carrot     1  (~150g)

Taro root  300g

Sweet potatoes  300g

CURRY SAUCE:

Lemongrass         2 stalks (or minced 1-2 tbsp or both :)

Shallot                  1 tbsp

Garlic                    1 tbsp

Curry powder       1/2 tbsp

Bay leaf                2-3

Sugar                    1 tbsp

Chicken broth       1 can (14oz/400ml)

Coconut milk         1 can (14oz/400ml)
