Crispy Fish Sauce Chicken Wings | Canh Ga Chien Nuoc Mam
Ingredients:
Chicken wings 1.5 lbs
Minced garlic 6-8 cloves
Thai basil a handful
Red & green chillies 2-4 each
Canola or corn oil 1/4 cup for aroma oil and additional amount for frying wings
Frying flour mix:
Potato starch 1 cup
All purpose flour 1/2 cup
Sea salt 1 tsp
Sweet & spicy sauce mix:
Garlic basil aroma oil 2 tbsp
Fish sauce 1.5 tbsp
Sugar 1.5 tbsp
Water 2 tbsp
Samba or Sriracha 2 tbp
Honey 1 tbsp
Direction:
Prior to cooking, prep the chicken wings by washing with salt water.
In a large bowl, quickly blanch the wings with boiling water (3 seconds) and let it drain.
Combine all ingredients for Frying flour mix (above) in a large mixing bowl. Toss the wings to coat evenly with the flour mixture. Shake off excess and set aside.
Place a small pan over low heat and fry minced garlic until it’s lightly brown. Drain and set aside.
Pour the same oil from frying the garlic back in the pan and fry basil leaves for about a minute. Once crispy, remove from the pan for garnish later.
Combine all ingredients from Sweet & spicy fish sauce mix (above) using the aroma oil from step 5. Turn on the heat to medium and bring the sauce to a boil. It’s ready once the sauce thickens slightly 3-4 minutes).
Transfer fried chicken then pour the sauce over. Add green and red chili then toss to combine everything.
