Korean Kimchi Pork Stir fried | Kimchi Duruchigi

Ingredients:

Pork belly 0.8 lb

Fermented Kimchi 1 cup

Kimchi juice 3 tbsp 

Garlic 3 cloves 

Scallion 3 stalks

Seasoning: 

Gochugaru 2 tbsp

(Korean pepper flakes)

Gochujang 2 tbsp

Sugar 1 tbsp

Pepper 1/8 tsp

Sesame oil  1 tsp

Vegetable oil 2 tsp

Tsp: teaspoon (5ml)

Tbsp: tablespoon (15ml)

Direction:

  1. Chop vegetables and measure out all the ingredients needed in advance.

  2. In a large heated pan, add oil then pork belly. Fry the meat until it’s lightly brown, then toss in chopped garlic and white part of scallion.

  3. Once it’s fragrant, add Kimchi and its juice with all the ingredients from the seasoning (above). 

  4. Stir fry for couple minutes then toss in onions and green part of scallions. 

  5. Continue to stir fry for 2-3 minutes until the onions are cooked then drizzle a little bit of sesame oil.

  6. Optional garnish with sesame seed and sesame leaves and it’s done! Serve over rice or wrap with sesame leaves. 

***Lower the heat and stir frequently once seasoning is added to avoid burning. But no worries if you accidentally get it close to burning, just add 1-2 tbsp of water.
